Dinner Menu for Apec Thailand CEO Summit announced

Apec Thailand 2003 menu - Thai Fusion

The Catering Department of Thai Airways International "Krua Karn Bin Thai" will be catering the main dinner for the Apec Thailand 2003 CEO summit. The menu is named "Thai Fusion", a blend of aroma and ingredients from traditional Thai food recipes with Western taste and Western style cooking method.

The catering service "Krua Karn Bin Thai" from Thai Airways is confident that their gastronomic menu will please the world leaders at the Apec 2003 conference which will be a mixture of leaders from both Asian and Western countries.

The Apec Thailand 2003 summit officially starts on October 19th 2003 and Thai Airways has surpassed itself in creating this wonderful "Thai Fusion Menu", carefully selecting a balance between Thai and Asian aroma in a fusion with Western taste. All recipes for the Apec dunner dishes will be prepared using only organic grown vegetables and herbs from Thailand.

The first dish served is to be Smoked Duck Breast, oven-baked with fragrant Citronella Grass Roots, accompanied by Thai Tomatoes stuffed with Thai Papaya Salad, better know as "Som Tam Salad". Thai Airways main chef said the idea of this first dish came from the famous Thai recipe "Som Tam Kai Yang" or Thai Papaya Salad with Grilled Chicken Breasts.

The second dish on the menu will be very similar to a Thai dish named "Kang Liang", which is a Thai Pumpkin Soup cooked from Mashed Pumpkins Puree spiced with Thai Peppers, Galanga Root and other Thai Herbs.

The main dish on the menu is "Taptim Fish" with Tofu and Shitake Mushrooms, served with spicy cream sauce. And finally, the dessert will be mixed tropical Thai fruits cooked in Ginger Cream Syrup and topped Thai Pandan Jelly and Lotus Seeds.

In order to ensure the maximum freshness of the ingredients, Thai Airways "Krua Karn Bin Thai" has constructed 2 special temperature-controlled vehicles to transport the needed ingredients for the Apec Thailand 2003 summit to Bangkok.

56 top chefs from Thailand and 132 specially selected and trained Thai waiters have been employed to provide the best Thai style service and hospitality for the participants of the Bangkok 2003 Apec dinner meeting, which will be attended in Thailand by more than 700 delegates from all over the world.
